Pesto Pasta

A go to favorite for the team after a long hard day at work, and a great alternative to your traditional tomato and cream based pasta sauces.

Ingredients Needed: Pasta, Pesto, Cherry Tomatoes, Balsamic reduction (optional), Fresh Chopped Basil.

Step 1: Just cook whatever pasta you love (tip: grooves in the pasta hold more pesto).

Step 2: When its finished, keep a cup of the starchy water before your drain the pasta.

Step 3: Heat a pot on the stove on medium high. When hot, add a 200g container to the pot.

Step 4: Next add some of the starchy water you set aside earlier to turn the pesto into a creamy consistency.

Step 5: Mix in your pasta for coverage, top with some balsamic reduction and top with cherry tomatoes.

Pesto Grilled Cheese

A home style favorite in the Rafferty household, and serves as a filling breakfast or brunch option.

Ingredients Needed: Bread, Pesto, Cheddar Cheese, Butter, Egg.

Step 1: Start heating a pan on medium heat, so you can cook a nice egg for the sandwich.

Step 2: Cut some thick slices of bread (we love a good homemade sourdough) and butter them, two slices per sandwich. Toast them in a toaster.

Step 3: Add some butter (or oil) and pan fry an egg, one per sandwich.

Step 4: When the toaster pops, spread some pesto onto both sides of the bread.

Step 5: Add some slices of cheddar to one side of the sandwich.

Step 6: When the egg is done, place onto the sandwich, and close both halves.

Wait a minute for the cheese to melt from the egg, its ready! Honestly, Its sooooo good, you won’t believe!

Pesto and basil topped Pizza

You can also make home made pizzas with pesto instead of tomato sauce!

Ingredients Needed: Pesto and/or Tomato Sauce, Chopped Toppings like: Mushrooms, Peppers, Tomatoes, Shredded Cheese, Basil.

Other Things Needed: Pizza Stones, Barbecue/Pizza Oven/Regular Oven.

Step 1: Purchase or make your own pizza dough for your bases, Cobs Bread makes fresh pizza bases. Preheat your oven or barbecue and place in your pizza stones.

Step 2: Chop up your desired toppings

Step 3: Flour the surface of what you are building your pizza on (you could even use a cutting board…). Place pizza base onto the floured surface.

Step 4: Spread the base with pesto and/or tomato sauce.

Step 5: Add any toppings you like, then top with fresh shredded cheese.

Step 6: Place pizza onto the hot stone, and bake till cheese is melted and pizza is cooked. Make sure the pizza doesn’t burn on the bottom.

Step 7: Optionally top with halved cherry tomatoes, basil, and drizzle with some balsamic reduction to finish, Yum!
